The Maven’s Brew: Crafting Your Own Pour-over in the Abid Clever Coffee Dripper

The Clever Coffee Dripper is a very easy and forgiving method of brewing a single serve cup of coffee. It is also very personal and can be tailored to fit personal tastes. Experiment with the amount of coffee, the fineness/coarseness of the grind and the length of time your leave your coffee extract. This happens to be my all-time favorite manual or pour over brewing method.

Using the Clever Coffee Dripper, our favorite coffees are:

* Coffee Maven: Brazil Capim and Colombia Timana San Marcos

* Roastmaster: Kenya or Ethiopian

While we may have a few days of warmer weather, here in the PNW, it is still spring and coffee can still be enjoyed hot. If a few weeks, I’ll share with you how I make iced coffee using the Clever Coffee Dripper.

To craft your very own pour-over using this method, you will need: Clever Coffee Dripper (L), #4 paper cone filter, coffee grinder, fresh roasted coffee, scale, timer, electric kettle or stove top for hot water, cold filtered water, 12 oz coffee mug

Here is how I craft a pour-over using the Clever Coffee Dripper:

  • Coffee:Water Ratio - 24g (.85 oz) coffee to 360g (12 oz) water [1 gm coffee : 16 gm water] . Yes, I do weigh both the coffee and the water in grams!

  • Heat water to 204 degrees F in electric kettle (or 30 seconds off boil on stovetop).

  • Set timer to 5:00 minutes. I use a countdown timer. Press start as soon as you begin to pour the freshly boiled hot water.

  • Put the paper filter (#4 cone for Large) into the dripper and rinse to reduce paper taste and warm the dripper. Coffee Maven tip: Rinsing your paper filter prior to brewing eliminates both paper dust on the filter as well as rinses out the paper taste. I find I need to rinse my filters three times before brewing.

  • Measure and grind coffee immediately before you brew. You want to use a medium-fine filter drip grind. Coffee Maven tip: I use the same grind as my regular drip coffee - medium drip grind like coarse kosher salt. Also, if you use a coarser grind, you may need to lengthen extraction time. If the water pools and does not drain effectively, try a coarser grind. If you use a finer grind, you will need a shorter extraction time.

  • Add coffee into the filter. Create a small trough in the center of the grounds. Set Clever Coffee Dripper on scale and zero out the weight.

  • Pour in about 50 gm water being careful to pour water in the center of the coffee and in the trough you created. This is about enough water to just cover the grounds in hot water. Let coffee bloom for about 20 seconds until the 4:30 minute mark.

  • Pour the remaining 310 gm of water over the next 20-30 seconds in a figure eight pattern being careful not to go all the way to the edge of the filter. Cover and wait. Coffee Maven tip: Also try stirring part way through when your timer reaches 1:30-2:00 minutes left on the countdown timer vs simply leaving it alone all the way through the extraction.

  • When time is complete, place dripper on top of a mug or other vessel to start coffee draining. To stop the flow, simply lift the dripper off the mug.

  • Enjoy!
