Over Ice or Cold Brew? Clever Coffee Dripper Over Ice

It's all a matter of opinion and personal taste. Of course, like politics, everyone has an opinion and is certainly welcome to their opinion. Recently, I have been exploring cold brew with some of our coffee and comparing them to over ice. I must confess, I still like my coffee over ice.
My disclaimer is that after reading a blog by Prima Coffee wrote about cold brew coffee vs coffee over ice, I did buy a couple new cold brewing tools. I'll write more about those in a few weeks after I have had some experience with them. This week, I did fine tune manually brewing coffee over ice in my Clever Coffee Dripper by Abid. These are available for purchase in our shop for $24 (plus shipping).
Here is my basic routine and recipe:
Coffee:Water Ratio: [1 gm coffee : 10-12 g water] which works out to 30-36 g coffee to 180 g water + 180 g ice
Water temp: 205 degrees F or 30 second cool down after boil
Time: 5:00 minutes (I use a countdown timer)
What you need: Favorite coffee ground for medium drip (like Kosher salt), scale, Clever Coffee Dripper, #4 cone paper filter (double or triple rinsed), hot filtered water, tumbler with 180 gm of ice, timer

Of note, increasing the amount of coffee you use definitely compensates for the melting of ice when the hot coffee concentrate hits it. This works to my advantage because you will have to buy coffee sooner! You can also accomplish this same thing by reducing the amount of water and ice you use, which works to your advantage.
Next, put the paper filter (#4 cone for Large) into the dripper and rinse to reduce paper dust and taste. (Note: I triple rinse my filters.)

You will need a 16 oz tumbler with 180 gm ice. (Note: As close to 180 grams as possible. Adjust the amount of water and ice to equal 360 grams total.)

Measure coffee into grinder. Remember, you want to grind immediately before you brew. You want to use a medium drip grind (like medium sea salt). I use the same grind as my regular drip coffee - medium drip grind. (Note: If you use a coarser grind, you may need to lengthen extraction time. If the water pools and does not drain effectively in Step 5, try a coarser grind. If you use a finer grind, you will need a shorter extraction time.)

Add coffee into the filter. Create a small trough in the center of the grounds. Then set a countdown timer for 5:00 minutes. (4:30-5:00 minutes...you'll have to experiment to see what you like.)
Next, add about 50 gm water being careful to pour water in the center of the coffee and in the trough you created. This is about enough water to just cover the grounds in hot water. Let coffee bloom for about 20-30 seconds.

Pour the remainder of the 180 grams of water over the next 20-30 seconds in a figure eight pattern being careful not to go all the way to the edge of the filter. Cover and wait. (Insert Jeopardy music here.)

At the 5 minute mark, place dripper on top of your tumbler with about 180 grams of ice to start coffee draining. Let coffee drain completely.
